Now that Max is just over one year old, we are really beginning to get the hang of things when it comes to mealtime. We primarily use the baby led weaning approach, allowing Max to feed himself and enjoy our meals alongside us, but he also enjoy smoothies and spoon-feeding too! Whatever method you use, the important thing is to get Baby fed!

As a breastfed, plant-based baby, Max enjoys a wide variety of fruits, vegetables, whole grains, beans, legumes, and healthy fats! On days when we don't have anywhere to be, I love to spend extra quality time with my little man, and it's been such a joy and a rewarding experience getting to figure out how to nourish his growing body! I hope these meals give you inspiration and helpful ideas for feeding your little ones!

COCONUT CURRY RECIPE:
If you do get some Taro on your hands, Peel and dice the taro and boil in a large pot. If you are using regular potatoes you donโ€™t have to peel them.

While the taro, rice or potatoes are boiling, to make a large serving of curry, sautรฉ a few cloves of garlic and 1 onion with about 1/4 cup of coconut milk and 2-3 tbsp of curry paste. Then add remaining desired veggies (we like cauliflower and zucchini and mushrooms) and sautรฉ a bit more (add more coconut milk if needed to keep veggies from sticking to the pan). Then add the rest of 2-3 cans of coconut milk and season to taste with black pepper, curry, cumin, salt etc.

Serve spoonfuls of curry over potatoes, rice or taro and squeeze lots of lime on top.

**make sure when purchasing curry paste to check the ingredients. A lot of curry pastes use fish sauce but a health food shop should have a natural and vegan healthy alternative. **

Teshia is a talented yoga instructor and a holistic nutritionist. I absolutely enjoyed chatting with her about her experience with transitioning to a vegan diet. One of my 2014 resolutions is to go vegan. And this time I want to do it in the healthiest way possible and to ensure that I transition with ease. I found Teshia's tips so helpful and I can't wait to implement them! :)

How and why I went vegan! Plus before and after pictures from my 30 lbs with loss (I'm 5'9" for those wondering why I don't quite look 30 pounds heavier in the before. I'm tall so when I gain weight, it's more evenly distributed but trust me, at the start of summer 2015 I weighted 168 and by the time I moved back to LA in October 2015 I weighed 138. I weigh bit more now, about 145 which is a healthy weight for my height...but more about that in tomorrow's video :)) So in this video I talk about losing the weight, why I went vegan, how I did it, and I share some tips for new vegans or anyone curious about trying a vegan diet.

I hope you find it helpful and realize that ANYONE can be vegan. I was soooo not a "typically vegan"type....I liked vegetables, but then again I liked all food! I could not imagine this would be a path I chose but it's honestly one of the best things I've ever done :)

Forks Over Knives โ€“ This is a great website but itโ€™s also a Movie that you can watch on Netflix and possibly Amazon that helps you understand a healthy vegan plant-based diet that will work for most people. Plus, they donโ€™t use processed food and all the recipes are super simple and tasty.

Today there is barely any excuse not to be vegan. Itโ€™s healthy for you, healthy for the environment, and simple too. You donโ€™t need fancy ingredients or special vitamins, and there is no such thing as carb combing to create complete proteins which have been debunked for some time. Just eat plants, and youโ€™ll be fine.
