Christian Hextrum is a little over average height so some people call me Big C. He lives in Santa Rosa with his mom, dad, and three sisters. He is a sophomore at Cardinal Newman and is 15 years old. His is currently the captain and leading scorer of the Newman JV basketball team. He attended St. Eugene's from kindergarten through eighth grade and will be at Newman until he graduates. Soon, he would like to begin serving in the St. Eugene's CYO basketball program to coach and mentor players. Christian would like to be an architect after college.

You donโt have to go vegan to fight climate change. Research shows that small changes to our diets can make big differences.

The University of California is a pioneer on climate research, renewable energy and environmental sustainability. UC is dedicated to providing scalable solutions to help the world bend the curve on climate change. UC research is also paving the way for the university to meet its goal of becoming carbon neutral by 2025.
In 2006, the United Nations stated:
โThe livestock sector emerges as one of the top two or three most significant contributors to the most serious environmental problems, at every scale from local to global. The findings of this report suggest that it should be a major policy focus when dealing with problems of land degradation, climate change and air pollution, water shortage and water pollution, and loss of biodiversity.โ
And then four years later, they warned that a global shift towards a vegan diet is vital to save the world from hunger, fuel poverty and the worst impacts of climate change.
So why exactly is animal farming bad for the environment?
Interest in vegan food and its associated health benefits has been booming across the rich world. A global retreat from meat could have a far-reaching environmental impact.
By 2050 the world's population could approach 10 billion - and around 60% more food could be needed to feed everyone. The environmental impacts of the food system are daunting its responsible for about a quarter of all greenhouse gas emissions and uses about 70% of all freshwater resources, and it occupies about 40% of the Earth's land surface.
Food rated emissions could increase to 50 percent by 2050 and fill up the total emissions budget that we have in order to avoid dangerous levels of climate change.
Interest in vegan food has been booming across the rich world. A major study has put the diet to the test - analyzing an imagined scenario in which the world goes vegan by 2050. If everybody went vegan by 2050 we estimated that food-related greenhouse gas emissions could be reduced by 3/4.
Cows are the biggest emission contributors. Bugs in their digestive system produce methane and deforestation for their pasture releases carbon dioxide - these gases warm the planet. If cows were a country, they'd be the third largest greenhouse gas emitter.
Prepare the the night before by adding the oats into a jar with the almond milk. Add in the raspberries, or your fruit of choice, and give it a good stir. Place in the fridge to set overnight. In the morning top it with dried fruit, nuts and/or seeds.
SNACK - Juice and Banana Bread Nakd Bar:
1 thumb size piece ginger
1/2 pineapple
1 cucumber
2 sticks celery
Juice the fruit and vegetables, pour into a glass and serve chilled.
LUNCH - Mexican Chilli Bowl (Serves 1):
2 potatoes
1 tsp olive oil
2 cloves garlic
1/2 tsp paprika
Salt & black pepper
Three Bean Chilli
1/2 avocado
Cashew Sour Cream
Toppings: Sliced red chilli, spring onion, coriander
Start by cutting the potatoes into wedges. Place them on a lined baking tray and drizzle over the olive oil, mince over the garlic and then season them with the paprika, salt and black pepper. Place those in the oven to cook for 25 minutes on 180 degrees celsius. Serve immediately once they are removed from the oven, top with the Three Bean Chilli, mashed avocado, Cashew Sour Cream and toppings of choice.
SNACK - Muesli Energy Balls (Makes 8):
1/2 cup oats
1/2 cup oat flour
1 green apple, grated
8 finely chopped dates
1 tbsp almond butter
1/2 tsp cinnamon
Add all ingredients into a large mixing bowl and roughly mixed it together with your hands. Take a small amount and roll them into balls to make 8 altogether. Store in an airtight container in the fridge for up to 4 days.
DINNER - Broccoli Pasta:
Broccoli Soup
Penne pasta
1/2 cup peas
Small handful basil, shredded
Cook the penne pasta and heat the broccoli soup. Rinse and drain the pasta, add the soup/sauce to the pan, then the pasta back in and stirred it through. Add in the peas and basil then serve with a squeeze of fresh lemon juice.
DESSERT - Almond and Raspberry Ice-cream with chocolate drizzle
Ice-lolly molds
Small handful raspberries (for each)
Almond milk
Prepare the day/morning before by adding the raspberries into an ice lolly mold then fill it to the top with almond milk, stir and leave to set in the freezer for at least 7-8 hours.
Today's video, I'm showing you a vegan, mostly whole foods plant based, grocery haul! I bought a LOT. This particular haul is more PRODUCE HEAVY because I still have lots of staples in my pantry (which is the reason why it's slightly more expensive than if I bought lots of pantry staples). Hope this gives you an idea of what you can buy at the grocery store.

It's never been a more exciting time to be vegan and plant based! The options at the grocery store are so exciting right now, but remember, just because it's plant based does not mean it's always good for you. Even though I am not a vegan, I love my veggies and I'm always cooking and experimenting with plant based products. Beyond beef is changing the meatless game, but there are some really exciting things happening with plant based yogurt, butter, coffee creamers, and cheese. Apple Dressing:
1/4 cup cooked chickpeas
1 apple, peeled and chopped
dash of garlic salt or regular salt (optional)
1/4 cup of flavored balsamic vinegar (apple is what I used)
a splash of water
Buffalo Sauce
1 tbsp of tahini
1.5 tbsp of franks red hot (or other mild hot sauce)
1 tbsp of water
