World Vegan Day is an annual event celebrated by vegans around the world. The benefits of veganism for humans and the natural environment are celebrated through activities such as setting up stalls, hosting potlucks, and planting memorial trees.

Prepare the the night before by adding the oats into a jar with the almond milk. Add in the raspberries, or your fruit of choice, and give it a good stir. Place in the fridge to set overnight. In the morning top it with dried fruit, nuts and/or seeds.
SNACK - Juice and Banana Bread Nakd Bar:
1 thumb size piece ginger
1/2 pineapple
1 cucumber
2 sticks celery
Juice the fruit and vegetables, pour into a glass and serve chilled.
LUNCH - Mexican Chilli Bowl (Serves 1):
2 potatoes
1 tsp olive oil
2 cloves garlic
1/2 tsp paprika
Salt & black pepper
Three Bean Chilli
1/2 avocado
Cashew Sour Cream
Toppings: Sliced red chilli, spring onion, coriander
Start by cutting the potatoes into wedges. Place them on a lined baking tray and drizzle over the olive oil, mince over the garlic and then season them with the paprika, salt and black pepper. Place those in the oven to cook for 25 minutes on 180 degrees celsius. Serve immediately once they are removed from the oven, top with the Three Bean Chilli, mashed avocado, Cashew Sour Cream and toppings of choice.
SNACK - Muesli Energy Balls (Makes 8):
1/2 cup oats
1/2 cup oat flour
1 green apple, grated
8 finely chopped dates
1 tbsp almond butter
1/2 tsp cinnamon
Add all ingredients into a large mixing bowl and roughly mixed it together with your hands. Take a small amount and roll them into balls to make 8 altogether. Store in an airtight container in the fridge for up to 4 days.
DINNER - Broccoli Pasta:
Broccoli Soup
Penne pasta
1/2 cup peas
Small handful basil, shredded
Cook the penne pasta and heat the broccoli soup. Rinse and drain the pasta, add the soup/sauce to the pan, then the pasta back in and stirred it through. Add in the peas and basil then serve with a squeeze of fresh lemon juice.
DESSERT - Almond and Raspberry Ice-cream with chocolate drizzle
Ice-lolly molds
Small handful raspberries (for each)
Almond milk
Prepare the day/morning before by adding the raspberries into an ice lolly mold then fill it to the top with almond milk, stir and leave to set in the freezer for at least 7-8 hours.

Queso Dip Recipe:
1 and 1/2 cups raw cashews
3 tbl nutritional yeast
1/2 tsp sea salt
1/4 tsp garlic salt
1/2 tsp cumin
1/2 tsp smoked paprika
1 cup hot water
Put all in the Vitamix and blend on high for a few minutes until steaming and creamy :)
“Mozarella” Recipe
1/2 cup raw cashews (soaked &
drained)
1 & 1/4 cup water
1 tsp lemon juice
1/4 cup tapioca flour
1& 1/2 tbl nutritional yeast
1/4 tsp salt
1/2 tsp garlic salt
Add soaked cashews, water, lemon juice, tapioca starch/flour, nutritional yeast, salt, garlic salt, & jalapeño to a Vitamix. Blend on high for 1 - 2 minutes.
Pour cheese into a small sauce pan, on medium high heat & stir with a wooden spoon constantly for 2 - 4 minutes. The key to this cheese staying smooth & not lumpy is the stirring, so make sure it gets your full attention. As it thickens you will need to scrape the sides, after 2 - 4 minutes, turn down to a low heat & continue to stir until it looks like a very melted cheesy consistency. Its ok to turn off the heat while it still looks a little liquidy, as it will firm up on its own.

We will then head over to the famous Vegan Junk Food Bar, originally started in Amsterdam, but now is a vegan chain restaurant and has a location in Barcelona. We will try the fried mac and cheese balls along with the fried vegan shrimp. We will continue our vegventure over to an all vegan sushi bar called Roots and Rolls. We will try the gyoza tacos, a fusion dish between a taco and a gyoza dumpling. Next, we will check out a HUGE all vegan grocery store. Afterwards, we will continue on to the highest rated vegan restaurant in Barcelona called CactusCar Bar. We will try some of their homemade zucchini soup and homemade bread, and continue by trying some Huera chicken nuggets, fries, and corn. We will end the feast there will a banana bread cake. And for the last restaurant in this episode, we will explore Tulsi, an all vegan restaurant serving a variety of international inspired cuisines. We will try the seitan chili and the croquettes.
