What my vegan baby and i ate today + day in the life 💕
I’m so happy to discover that feeding my vegan baby isn’t that difficult. I actually have had a lot of fun cooking for her these last few months. Now that she’s up to 3 meals a day I’ve been making her lots of steamed vegetables, whole grains, fresh fruit, and sometimes I’ll give her the food I’m eating (even though it’s made with spices). I even mix in small amounts of allergens like nut butter or almond flour to help prevent a future allergy.

Three of my favorite bowls! Balanced, colourful, whole food plant based, packed with flavors and nutrients 💚 (See all recipes below 👇🏽)

🍠 SWEET POTATO BOWL | 2 servings
- 2 big sweet potatoes
- 1 red onion
Tahini dressing
- 2 tbsp tahini
- 1 tbsp lemon juice
- 1/2 tbsp maple syrup
- Water to thin
For the chickpeas
- 230g chickpeas, drained
- 1 tsp cumin
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/2 tsp chili
- 3 cup kale
🥭 TROPICAL BOWL | 2 servings
Marinade:
- 2 tbsp tamari sauce
- 1 tbsp maple syrup
- 1 tsp garlic powder
- 1/2 tsp dried thyme
- 1/4 tsp dried ginger
- Pinch cloves
- 200g Firm tofu
Mango salsa:
- 1/2 mango
- 1 avocado
- 1/4 red onion
- 1/2 tbsp lime juice
- Pinch salt & chili flakes
For the bowl:
- 1/2 cup Quinoa, dry
- Greens/ lettuce
- Cherry tomatoes
🌯 BURRITO BOWL | 2 servings
Cheese Sauce:
- 1/2 cup cashew nuts (first boil 5 min then drain if not using a high speed blender)
- 1 1/2 tbsp nutritional yeast
- 1/2 tsp salt
- 1/4 tsp onion powder
- 1/4 tsp turmeric
- 1/4 cup water
Beans:
- 230g back beans, drained
- 2 tbsp corn kernels
- 1/2 tsp paprika powder
- 1/2 tsp garlic powder
- 1 tsp cumin
- Water to cover
Tomato salsa:
- 6 cherry tomatoes
- 1/4 red onion
- 2 tbsp chopped fresh coriander

- Lettuce
- Red bell pepper
- Cucumber
Interest in vegan food and its associated health benefits has been booming across the rich world. A global retreat from meat could have a far-reaching environmental impact.
By 2050 the world's population could approach 10 billion - and around 60% more food could be needed to feed everyone. The environmental impacts of the food system are daunting its responsible for about a quarter of all greenhouse gas emissions and uses about 70% of all freshwater resources, and it occupies about 40% of the Earth's land surface.
Food rated emissions could increase to 50 percent by 2050 and fill up the total emissions budget that we have in order to avoid dangerous levels of climate change.
Interest in vegan food has been booming across the rich world. A major study has put the diet to the test - analyzing an imagined scenario in which the world goes vegan by 2050. If everybody went vegan by 2050 we estimated that food-related greenhouse gas emissions could be reduced by 3/4.
Cows are the biggest emission contributors. Bugs in their digestive system produce methane and deforestation for their pasture releases carbon dioxide - these gases warm the planet. If cows were a country, they'd be the third largest greenhouse gas emitter.
Dr. Neal Barnard talks about how eating a plant-based diet can help curb climate change and reduce extreme weather events.
