Do you ever feel like Orange County is so conservative they closed almost all of the recycling centers to ward of homeless people who love to recycle? Well I have to go to Mission Viejo to recycle. But at least there's a cool little cafe there called Higher Grounds and a lovely little hiking area with statues and bridges, a peace obelisk and an Earth Day monument.
It's Earth Day, and even though veganism is clearly the greatest thing you can do for the environment, one can always do more. And I'm not one to shirk my responsibilities.
Some of these recipes come from my roots in Spain and Italy, enjoy!
Prepare the the night before by adding the oats into a jar with the almond milk. Add in the raspberries, or your fruit of choice, and give it a good stir. Place in the fridge to set overnight. In the morning top it with dried fruit, nuts and/or seeds.
SNACK - Juice and Banana Bread Nakd Bar:
1 thumb size piece ginger
1/2 pineapple
1 cucumber
2 sticks celery
Juice the fruit and vegetables, pour into a glass and serve chilled.
LUNCH - Mexican Chilli Bowl (Serves 1):
2 potatoes
1 tsp olive oil
2 cloves garlic
1/2 tsp paprika
Salt & black pepper
Three Bean Chilli
1/2 avocado
Cashew Sour Cream
Toppings: Sliced red chilli, spring onion, coriander
Start by cutting the potatoes into wedges. Place them on a lined baking tray and drizzle over the olive oil, mince over the garlic and then season them with the paprika, salt and black pepper. Place those in the oven to cook for 25 minutes on 180 degrees celsius. Serve immediately once they are removed from the oven, top with the Three Bean Chilli, mashed avocado, Cashew Sour Cream and toppings of choice.
SNACK - Muesli Energy Balls (Makes 8):
1/2 cup oats
1/2 cup oat flour
1 green apple, grated
8 finely chopped dates
1 tbsp almond butter
1/2 tsp cinnamon
Add all ingredients into a large mixing bowl and roughly mixed it together with your hands. Take a small amount and roll them into balls to make 8 altogether. Store in an airtight container in the fridge for up to 4 days.
DINNER - Broccoli Pasta:
Broccoli Soup
Penne pasta
1/2 cup peas
Small handful basil, shredded
Cook the penne pasta and heat the broccoli soup. Rinse and drain the pasta, add the soup/sauce to the pan, then the pasta back in and stirred it through. Add in the peas and basil then serve with a squeeze of fresh lemon juice.
DESSERT - Almond and Raspberry Ice-cream with chocolate drizzle
Ice-lolly molds
Small handful raspberries (for each)
Almond milk
Prepare the day/morning before by adding the raspberries into an ice lolly mold then fill it to the top with almond milk, stir and leave to set in the freezer for at least 7-8 hours.

So many viewers have been asking me how to make a cake without condensed milk so here goes. So instead of using condensed milk I have used 1 cup of coconut milk and one cup of jaggery sugar or normal sugar or you can use brown sugar.
To make it vegan I have substituted the butter for oil .
To make the chocolate truffle I have used dark chocolate couverture with coconut milk and if you want you can add any type of sugar.
Garnish with whatever you like .
I do hope you all have supper success in making this cake.
Ingredients
Wheat Flour 1 cup
Baking Powder 1 tspn
Baking Soda 1 tspn
Cocoa Powder 1 tbspn
Jaggery Sugar 1 cup
Olive Oil 1/2 cup or 100 ml
Salt a pinch or 2
Vanilla Essence 1 tspn
Apple Cider Vinegar 2 tspns
Coconut Milk 1 cup
For the sauce
Dark Chocolate Couverture 1 cup
Coconut milk 3 tbspns

The second video in our little paris series is a where to eat in Paris (vegan edition).
Quick disclaimer: I was fully vegan for 6 years and I now eat sustainable fish & eggs occasionally. On our trip I tried dairy for the first time in years as I didn’t want my diet choices to dictate our trip too much. My partner isn’t vegan but is when he’s with me (: This was my second time in Paris whilst vegan, and it hasn’t gotten easier since last time. I’ll link all the places mentioned before and any other places we visited throughout the trip with great options!
My top tips for travelling to Paris as a vegan:
⭐️ Buy a little bottle of dairy free milk to enjoy with your coffee either in your hotel or at cafes (as it’s not common for places to offer any alternative milks to full cream!) the little coffee carts around paris usually have options, my favourite was Cafe Kitstume!
⭐️ Have a few places in mind of where to eat in the general area you’re heading each day & check their menus before
⭐️ Make a trip to one of the vegan/gf bakeries and buy some croissants for the next few days so you can experience the Parisian breakfast properly each morning if there isn’t one nearby where you’re staying ☺️
⭐️ & finally, don’t beat yourself up if you want to try something that has dairy, eggs etc. in it, you’re travelling - enjoy it and don’t let what good you do the other 364 days of the year taint your Parisian experience!
How and why I went vegan! Plus before and after pictures from my 30 lbs with loss (I'm 5'9" for those wondering why I don't quite look 30 pounds heavier in the before. I'm tall so when I gain weight, it's more evenly distributed but trust me, at the start of summer 2015 I weighted 168 and by the time I moved back to LA in October 2015 I weighed 138. I weigh bit more now, about 145 which is a healthy weight for my height...but more about that in tomorrow's video :)) So in this video I talk about losing the weight, why I went vegan, how I did it, and I share some tips for new vegans or anyone curious about trying a vegan diet.
I hope you find it helpful and realize that ANYONE can be vegan. I was soooo not a "typically vegan"type....I liked vegetables, but then again I liked all food! I could not imagine this would be a path I chose but it's honestly one of the best things I've ever done :)

Reptiles often eat other animals and for some that can be a deal breaker. Are there any reptiles that only eat plants? Well yes, and these five make amazing pets!
Rdents for some people is a deal breaker so the logical alternative would be an herbivore reptile that only eats plants. Great news, there are several great salad munching animals to choose from. If you are into big reptiles a rock iguana or a rhino iguana might be the right option for you! Cyclura as a family are so interesting and unique. These big lizards can be amazing pets for the right keeper and they are 100% herbivores. A smaller but still sizable option if you're looking for an arboreal lizard might be a monkey tailed skink. Monkey tail skinks have a wicked prehensile tail and can have an amazing temperament for an arboreal species. of course these skinks only eat plants which makes the diet rather easy to take care of and overall these can be great pets! A more common vegan lizard would be a uromastyx. There are several species ranging from bright colours to more drab colors and small or large options too. All Uromastyx eat plants and seeds only making them great pet options for those keepers who want a really cool lizard buddy with super hot and dry environments. Tortoises can't be overlooked, well most of them. Red foots and other similar tortoises do eat some protein but most other tortoises are 100% plant based shell bois! Want something really unique? Chuckwalla lizards are really cool, come in many colors and of course that diet it is 100% leafy greens and other plants!

FRIDGE REORGANIZATION TIME! A clean refrigerator = a clean lifestyle. I have been wanting to cook more food at home and meal prep, but without an organized fridge, it's been difficult to achieve that goal. So it was time to declutter, organize and start cleaning out my fridge! Time for a KITCHEN ORGANIZATION! At the end of the deep clean, I give you a fridge tour and show you what's in my fridge!
By working with @horderly (my favorite personal organization team), I learned how to clean your fridge, how to organize your kitchen, and how to simplify your space. I picked up a ton of home organizing and spring cleaning tips for an overall organized and clean kitchen.
I totally overhauled my refrigerator and made it as sustainable as possible (HELLO Package Free glass jars!), while also making it highly functional for me and my wellness lifestyle.
You'll notice we don't have any meat in the fridge. While Michael and I do eat meat, we just prefer not to cook it ourselves at home, so we typically purchase our meat already cooked from high-quality restaurants and grocers. That's why this fridge contains mostly fruits & veggies! 🌶 🌽 🥒 🍆 🥕 🥔 🥗 🍠 🍅

A Florida woman says she has found the 'fountain of youth"
Annette Larkins shows off her garden in her Miami-Dade County backyard. It's full of fruits and vegetables. Every corner of her garden has something that is edible. She also collects rainwater to drink and water her plants.
Annette says the food in her garden is her 'Fountain of Youth.'
"I am very vibrant, I have lots of energy, as I told you before, I am up no later than 5:30 in the morning as a rule, and I am ready to go," she said.
Annette says she does not eat animal products-- her food is unprocessed and uncooked. "My diet consists of fruits, nuts, vegetables and seeds. I do a lot of sprouting of seeds and as you can see from my garden and of course these are the raw foods that I eat."
Annette also juices fruits and veggies. You name it, she can juice it. Grapefruits, pineapples, even spinach. But not everyone in the Larkins family eats and drinks this way.
Amos says people even wonder if Annette is his wife. "They will ask me 'what am I doing with a young girl? or they will say 'you've got your granddaughter with you,' things like that."
Annette says because friends and strangers kept asking her questions about her health and youthful appearance, she decided to publish two Journey To Health booklets, and she produced a DVD 12 years ago.
"The Discovery Channel, they took sections of the booklet and translated them into Spanish which is, by the way, my second language."
Her husband says she is vibrant person. "She is an amazing person, she does everything. I mean she builds computers, makes all of her own clothes, grows her own food, speak three languages, it's amazing."
